Early dinner throwback yesterday at # sumobarhappy located along # waterloostreet , a place which i literally grew up at, attending orchestral rehearsals nearby every weekend more than 15 years back, not forgetting the all too regular book hunts at the adjacent bras basah complex. As it was our first visit here, we asked for recommendations and were told that their "sumo ramen" is worth a try. It is like the ramen version of chankonabe of sorts, different beef cuts and cooking styles all in a bowl. We opted for tonkotsu broth base and the ramen were of the thin and straight fukuoka-style. There is so much going on in that bowl of ramen. The braised tenderloin was our favorite as it had a somewhat sous vide like texture with the insides still deliciously pink and succulent. The sliced US beef reminded pork belly incidentally and was beautifully seared for those wonderful charred flavours. The roasted oxtail, could do with a bit more work though. The tonkotsu broth which was purportedly slow cooked for 48 hours tasted robust with a certain sweetness to it. Topped with finely julienned negi and toasted nori sheets on the side, the bowl wasn't exactly cheap at 23 bucks a pop but definitely worth the price vis-a-vis other joints here which serve slightly cheaper alternatives but with a lot less not just in quantity but also quality. The bowl of sumo ramen also comes with one whole ajitsuke tamago and like many ramenya serving hakata style ramen, additional eggs are free flow on the side but the eggs dont just come plain jane hardboiled here but instead are ajitsuke tamagos as well! Kaedama is not on the menu but is available at 3 bucks for a generous serving so remember to save some broth for it! Will definitely be back to try their signature short ribs ramen next time.
